As XVII c. documents prove, Zampone has very old origins and is beyond all doubt an old specialty of Modena’s cuisine. In 1776, Francesco III, then Milan’s governor, used to get Zampone prepared in Modena for his feasts. Zampone is the pig’s front leg stuffed with choice minced pork and fat parts, pigskin and spices. It is pre-cooked in its foil package so that it keeps for a long time out of the fridge. Recently Modena Zampone has been given the prestigious IGP (Protected geographic area) certification for typical food specialties, by EU regulation n. 509/1999. The IGP certification guarantees that products are made in the traditional place of origin, according to the “traditional” recipe (controlled by specific regulations) and have special, quality characteristics.
