The Taralli are a typical product of the Pugliese tradition. Made from choice raw materials (in particular extra virgin olive oil) and without any preservatives, it can be considered an excellent substitute and evev bread.Once a homogenious and even mixture has been obtained, it is left to "rest".After the leavening of the dough strips like breadsticks are made. They are closed, uniting both extremities together, in this way shoping the classical form of the Tarallo. Before boking in the oven at 200° the product is immersed in boiling watwr (90°), according to the ancient traditions. That is the so called "scaldatura", one of the most important phases of the manufacturing of the Taralli, and essential to make the product friable and easy to digest.
