Pasta has to be a pleasure for both eyes and mouth, for this reason our Pici are produced using a particular bronze press, and then slowly letting them dry a low temperature. The bronze "trafila" gives the pasta a rough porous surface that enables a homogeneous cooking and a good absorption of sauces. Thanks to the slow and natural drying at low temperatures, tha pasta does not vitrify externally, it heightens instead the roughness and porosity of its surface thus maintaining its characteristic qualities.
