Not only does it still have the same shape and taste, it is also made in the same way, in the same place of origin, following the same old rules handed down from father to son. For this reason it has been assigned the D.O.P. label (Protected Denomination of Origin – European Label).Parmiggiano-Reggiano is very simply made with the highly-praised local milk, fire and rennet, with old methods and the art anf passion of the cheese maker. According to tradition, only selected 2-year-old cheese can be certified by Consorzio Parmigiano-Reggiano as extra quality.
