This cured pork neck is prepared according to an old traditional recipe using guaranteed Italian pork meat from pig breeding farms in Emilia Romagna and Lombardia. First-rate ingredients and, above all, the fine climate of Piacenza’s hills give this product a special flavour and delicacy. Thanks to its particular features, Piacenza’s Coppa has been assigned the European D.O.P. (Protected Designation of Origin) certification guaranteeing the product’s quality and origin. To prepare it, meat is salted and spiced with pepper grains, cloves, cinnamon, bay seeds and nutmeg. Then it is tied up with hemp rope by expert hands and left to mature with the ideal climatic conditions and the right temperature for at least six months.
