These very soft and fragrant, handmade sweets are typical of traditional local cooking. They are rustically prepared with Italian sweet almonds, a few bitter almonds, eggwhites and sugar. Almonds are parboiled and slightly toasted. Then they are ground and combined gradually with the whipped egg whites and sugar without use of preservatives and food colourings. Finally Amarelli are baked at a low temperature, till they become characteristically golden all over.
