Traditional balsamic vinegar of Modena - extra old 3.3 fluid oz

Balsamic vinegar is a unique, inimitable product. Its production is a deep-rooted, traditional art form in Modena. Indeed, the intricacies of production were once the jealously guarded secret of but a few well-to.do families. It is produced using the must from top quality Trebbiano grapes grown on hillsides in the Modena countryside stretching between the Secchia and Panaro rivers. The must is cooked outdoors in large open copper pots, and once sufficiently reduced is left to cool and later poured into wooden casks, to which a good quality wine vinegar is added. It is then left to rest at length until it becomes matures. The maturing in casks in the peace and quiet of the Acetaia (the place where the vinegar is made), together with the care and passion of the producers, transform this mixture into a densa, aromatic “dressing”, with sweet and sour notes: a specialty unmatched anywhere in the world. The “EXTRA OLD” is aged for a minimum of 25 years!!
